ABYSSAL is a dark coffee made in a fluid bed roaster, some of the key aspects of this roaster produce some of the best flavors in espresso coffee.

This coffee is made in our fluid bed roaster, some of the key aspects of this roaster produce some of the best flavors in an Espresso coffee.
Fluid Bed – The roaster has no drum, instead, we blow high-pressure heated air through a perforated sheet at the bottom of the roaster. The air keeps the beans moving around, preventing them from staying in contact with the hot metal surface. This prevents “tipping” in drum roasters when a bean is burnt on the metal. Tipping adds some bitterness to the cup.
High Air Flow – This means that all the chaff is blown off the bean. The chaff is a light shell on a part of the bean that falls off during the roasting process. If it’s not taken out quick enough during the roast, it can turn into tar on the surface of the hot drum, adding more bitterness to the cup.
These two factors are especially important with Espresso.
We use computer controls that monitor the actual temperature of the beans, to get the same roast every time. This is important with Espresso because, toward the end of the roast, the beans darken very rapidly.
Our coffee is 100% Arabica, roasted fresh daily. You will get the best flavor if you grind the coffee yourself.
We package our coffee in bags with 1-way air valves to keep the product fresh. It is best stored in a cool, dry place. You can keep it longer in the refrigerator, but you should never freeze it.
Roasting Profile: Dark roast, roasted well into the second crack, around 465 degrees.
